Why not try this for an easy St Patrick's Day or early Easter treat? The apples make for a really moist cake. Heat it up and serve it with custard for a yummy, comforting dessert. Use dessert apples, not cooking apples or it will be too sour.
Ingredients
Makes: 1 loaf
100g butter
150g caster sugar
2 eggs
100g buttermilk or yoghurt
1 teaspoon vanilla extract
200g flour
1 1/2 teaspoons baking powder
2-3 apples, depending on size
Preheat the oven to 180 C / 160C Fan
Melt the butter. Whisk the eggs and sugar until foamy.
Blend wet ingredients, then stir in the dry ones.
Peel and slice the apples.
Pour the cake mix into a 1lb loaf pan, or suitable cake pan. Stuff in as many pieces of apple as you can manage.
Bake for about 50 minutes and it’s ready.
