The advert says “eggs are fast food and good for you”. I wholly concur, but sometimes you want more than just omelettes and boiled eggs, so pimp them up like this. Lots of countries do eggs something like this; from Israeli shashuka to Mexican huevos rancheros, but this way is quick and simple. It’s great for January when you are craving simple, healthy stuff with bags of flavour.

Ingredients

2 red peppers
Half an onion
3 tomatoes
2 tbsp oil or butter
4 eggs
1 tsp salt
Half a tsp black pepper

Method

Finely dice the onions and peppers. Peel and dice the tomatoes. This does make a difference. The skin can be bitter and tough. Skin the tomatoes by blanching in hot water and then plunging into cold before peeling the skin off. Fry the onions over a medium heat and then add the peppers and tomatoes. Then break the eggs into the pan and scramble them into the vegetables. Continue cooking until the eggs are to your liking. Season and serve.

Tip

This is lovely with grated cheese on top and some crusty bread.
